Deaminase is a adeny1 deaminase preparation produced by Aspergillus oryzae fermentation. Deaminase
catalyzes the hydrolytic cleavage of 5’-AMP to 5’-IMP and NH3.The nucleotide 5’-GMP and 5’-IMP are
the well known natural flavour enhancer. Deaminase can transform yeast extracts to natural flavour
enhancer.

Working Principle
AMP-deaminase is an enzyme that hydrolyzes 5'-adenosine monophosphate (5'-AMP) to form 5'-inosine monophosphate (5'-IMP) and ammonia. This enzyme is also referred to as adenylic acid deaminase or adenyl deaminase.
 
The enzyme complies with the recommended specifications of the FAO/WHO's Joint Expert Committee on Food Additives (JECFA) and the Food Chemicals Codex (FCC) for food-grade enzymes.

Applications
AMP-deaminase is used for the preparation of 5'IMP as a nucleic acid seasoning agent. Yeast extract is prepared by extracting the content of the yeast cells after lysing yeast with
 a lytic enzyme. 5' ribonuclease is allowed to react on the extract to hydrolyze RNA into 5'-nucleotides, namely 5'-AMP, 5'-GMP, 5'-UMP and 5'-CMP. 
However, because 5'-AMP does not have a flavor-producing ability, AMP-deaminase is allowed to act on 5'-AMP to generate flavor-producing 5'-IMP.
